Kick off grilling season with proper food safety

For many Americans, the official kickoff to summer picnic and grilling season happens this weekend. With all of that food handling happening, it’s inevitable than many of us will end our fun afternoons with no-so-fun circumstances. An estimated 128,000 people nationwide will end up in the hospital with foodborne illnesses this year, but many of these can be prevented by properly cooking and storing foods when traveling and cooking out. The U.S. Department of Agriculture’s (USDA) Food Safety and Inspection Service (FSIS) recommends that you refresh your memory on food safety before diving into summer festivities. Grilling basics: Keep perishable foods at or below 40ºF. Food should never sit out longer than 2 hours. If weather is hot, knock this down to 60 minutes. Pack separate coolers for perishable items and other items like drinks, if people will be reaching in and out. This will ensure your meats or poultry stay cold,…

Grapefruit, avocado, capers, a flavorful salad for all seasons

Discounts can lead you to make some questionable choices. In one of those “I’m totally saving money” moments, I purchased an enormous jar of capers for two bucks at the market a few months ago. (It was 150 servings!) My love of the little briny flower buds is strong, but how many cups of capers can one person honestly eat? Since my excessive purchase, I’ve let them be my muse. You’d think a recipe like the one below would have started with the citrus at its center. But actually, it was the salty capers that lead me in. But no matter where you start in a recipe, it’s the final product that matters most. This recipe works all year round. Make it in the winter when citrus is in peak season. Or whip it up in summer when we have an endless appetite for all things fruity. The sour to semi-sweet grapefruit pairs perfectly with the smooth,…

Consumer survey forecasts a busy holiday shopping season

Consumers expect to spend an average of $967.13 on holiday shopping this season, according to a survey conducted by Prosper Insights & Analytics for the National Retail Federation (NRF). That’s up from the $935.58 consumers said they would spend in 2016. The national survey found that shoppers are less concerned about the economy than they have been in the past. Only 27 percent reported that their spending would be affected compared to 32 percent last year. “With employment and incomes increasing, consumers are more confident this year, and that is reflected in their buying plans for the holidays,” NRF President and CEO Matthew Shay said. “All signs are that this will be a busy holiday season.” Shoppers plan to spend these amounts in the three major categories: gifts ($608.06); foods, decor and cards ($218.08); and non-gift items ($140.99). For the first year ever consumers named online as their most likely shopping destination with 59 percent…
