At this point in the summer, you’re probably still picking lots of zucchini and squash from your garden. Or if you’re lucky, friends are trying to offload their extras. This zucchini casserole is a great way to use up all the zucchini and squash you have laying around. It might be the end of summer, but the warm weather means it’s still solidly squash season. Easy peaches and cream protein smoothie

With just a few ingredients, this smoothie will be your go-to breakfast throughout the whole peach season. There is nothing quite like the sweet taste of a delicious, juicy peach in the summertime. Add a pinch of cinnamon, some skim milk, and Greek yogurt for protein, and you have a healthy, nutritious peaches and cream-like smoothie to get your day started the right way. Broccoli Bisque: One pot, one blender, one bowl

I guess I never knew how tasty and easy soups were to make in the blender. Just simmer some ingredients in a pot; add to blender; serve in bowl and voilá! Here’s a puréed soup recipe I made with an unlikely ingredient: broccoli. It packs a ton of veggies into each serving, and the fresh, green color gives all kinds of healthy feel goods. I’m not sure if fall weather is here to stay, but my fall baking kick sure is! As soon as September hits I can’t stop searching for new ways to use apples, pumpkins and pears. And pretty much everything has a hefty dose of ground cloves and nutmeg. I just love fall desserts! I’m not sure who first named this type of light and airy dessert “pumpkin delight,” but I’ll tell you, they definitely got it right. It’s absolutely delightful. The perfectly spiced pumpkin layer tastes like heaven sandwiched between smooth cream cheese, crushed pecans, and of course, whipped topping. It’s a little bit of fall in every bite. In fact, you could substitute this as your pie this year for Thanksgiving, and your crew would gobble it up just the same. I was getting together with neighbors for our first fall themed gathering, but the weather is still in the 90s, so traditional pumpkin pie just felt out of place.
