I have an intense obsession with pumpkin milkshakes. But I know that can’t be my breakfast go-to — well, everyday, anyway. I wanted to come up with something that had all the taste but kept out all the sugar. This creamy pumpkin smoothie tastes just like the classic Thanksgiving pie. And while nothing can replace my milkshake love, it’s an actual breakfast — and one I can feel good about.

It’s made with just a few ingredients, so it’s not fussy. It’s low calorie, vegan and gluten-free. What more could you ask for?

Make sure you’re using canned pumpkin purée and not pumpkin pie filling. The latter has loads of sugar (and then we’d be right back at the health levels of our milkshake breakfasts). Sure, you have to add your own sweetness and spices to pumpkin purée, but you get to customize it to your liking — and they’re spices you’ll have on hand anyway.

Just toss everything in a blender. Blend on high, and taste to see if it’s to your liking. I tend to like a lot of spice, so if you usually like less, start small. You can always add more spice. If the spice got too strong, balance it with more milk or more ice cubes.


Healthy Pumpkin Smoothie

Makes 2 smoothies

Ingredients

  • 1/2 cup pumpkin purée
  • 1 1/4 cup soy milk (any milk will work here)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/16 tsp ground nutmeg
  • dash of ground ginger
  • 1 tsp honey
  • 2 cups ice cubes

Directions

  1. Add all the ingredients to the blender (ice goes in last), and blend until smooth.
  2. Serve immediately. Enjoy!

*Substitute the honey for any sweetener you like. Or don’t use one. It won’t be sweet, but it still tastes great with the sweetness from the milk.

*Option: Also, try adding a banana to this recipe for a more complete and filling breakfast.
