5 big ways eating pumpkin seeds could improve your health

They may be small, but pumpkin seeds pack a nutritional punch. Like nuts, pumpkin seeds are a great source of protein and healthy fats including omega-3. Eating only a small amount of them will provide you with substantial levels of many of the nutrients and minerals you need. In a one ounce serving (28 grams), you’ll get 151 calories — mostly from fat and protein — but also zinc (14%), magnesium (37%), iron (23%), vitamin K (18%), zinc (14%), copper (19%), manganese (42%), and phosphorus (33%). Pumpkin seeds may appear on menus or products by the name “pepita” — a Mexican Spanish term. This typically denotes that the white, hard seed you usually see when you carve a pumpkin, has been shelled, and you can expect only the flat, green, oval interior seed. Because of their profile, pumpkin seeds have been linked to improved heart health, prostate health, and protection…

Pumpkin whoopie pies make a perfect fall treat

I’m not sure if fall weather is here to stay, but my fall baking kick sure is! As soon as September hits I can’t stop searching for new ways to use apples, pumpkins and pears. And pretty much everything has a hefty dose of ground cloves and nutmeg. I just love fall desserts! Growing up in Pittsburgh, I wouldn’t have thought to call these sandwich cookies anything but “gobs.” If you’re unfamiliar, gobs are classically a chocolate cookie dessert with white icing at the center. You may also know them as whoopie pies if you live outside of Western Pennsylvania. No matter what you call them, they’re delicious. There are tons of inspired flavor variations now days. I’ve seen s’mores, red velvet, and chai snickerdoodle. There is even a whoopie pie festival in Hershey, Pa. every year. But of course, pumpkin baked goods are king of the season, so here…

Layered Pumpkin Delight Dessert Recipe

I’m not sure who first named this type of light and airy dessert “pumpkin delight,” but I’ll tell you, they definitely got it right. It’s absolutely delightful. The perfectly spiced pumpkin layer tastes like heaven sandwiched between smooth cream cheese, crushed pecans, and of course, whipped topping. It’s a little bit of fall in every bite. In fact, you could substitute this as your pie this year for Thanksgiving, and your crew would gobble it up just the same. I was getting together with neighbors for our first fall themed gathering, but the weather is still in the 90s, so traditional pumpkin pie just felt out of place. Pumpkin pie feels a little stuffy to me for casual gatherings anyway. Scooping this dessert with a knife and big spoon felt perfectly autumn potluck. Enjoy this delicious Pumpkin Delight recipe now and all the way through fall. Layered Pumpkin Delight Dessert Serves…

Creamy Pumpkin smoothie makes for healthy fall breakfast

I have an intense obsession with pumpkin milkshakes. But I know that can’t be my breakfast go-to — well, everyday, anyway. I wanted to come up with something that had all the taste but kept out all the sugar. This creamy pumpkin smoothie tastes just like the classic Thanksgiving pie. And while nothing can replace my milkshake love, it’s an actual breakfast — and one I can feel good about. It’s made with just a few ingredients, so it’s not fussy. It’s low calorie, vegan and gluten-free. What more could you ask for? Make sure you’re using canned pumpkin purée and not pumpkin pie filling. The latter has loads of sugar (and then we’d be right back at the health levels of our milkshake breakfasts). Sure, you have to add your own sweetness and spices to pumpkin purée, but you get to customize it to your liking — and they’re spices you’ll have on hand anyway. Just…

Easy chocolate hazelnut, pumpkin brownies

For an easy way to make brownies, try this flourless pumpkin, chocolate hazelnut recipe. It’s seriously the most moist dessert I’ve ever had. It’s sort of a cross between cake and brownies, but whatever you call it, you’ll love this sweet treat alone or served with ice cream and walnuts in a sundae. All of the ingredients go right into the blender, so there’s nearly no clean-up. It tastes mostly of chocolatey hazelnut, but if you want more fall flavor try adding cinnamon or nutmeg. chocolate hazelnut Pumpkin bread Makes 1 loaf Ingredients 1 1/4 cups chocolate hazelnut spread 1/4 cup unsweetened cocoa powder 2 eggs 3/4 cup pumpkin purée 1 1/2 tsp baking powder 1 tsp ground cinnamon (optional) 1/4 tsp nutmeg (optional) Directions Preheat oven to 350ºF. Pumpkin pie milkshake recipe

Fall temperatures don’t exactly scream ice cream, but this milkshake is pure pumpkin bliss. It’s like pumpkin pie in a glass, but better. This creamy concoction is perfect to whip up when you have a bit of purée left over from baking a pie. It only takes a few tablespoons of the canned purée, along with some cinnamon, cloves and other classic fall spices to replicate the most awesome of all autumn desserts. So break out the blender for this delicious holiday indulgence. Pumpkin pie milkshake Serves 2 Ingredients 2 1/4 cups of vanilla ice cream 1 cup skim milk (or your preferred milk) 4 tbsp pumpkin purée 1/4 tsp nutmeg 2 tsp ground cinnamon 1/4 tsp allspice 1/4 tsp ground cloves whipped cream for topping Directions I’ve make this milkshake at least 20 times. Let me recommend two options: 1. The first option, you’re going to put all of these ingredients (except for the whipped cream)…

How to make your pumpkin last longer

From funny faces to scary skulls, there’s no limit to what you can carve into a pumpkin. Displaying your work is one of the Hallmark’s of Halloween. But that excited fall feeling quickly fades when your masterpiece becomes a mushy mess on the front porch. Of course you know your jack-o-lantern won’t last forever, but there are a few steps you can take to help keep your hard work intact for longer: Always buy your pumpkins from a local farm. Because it’s grown on-site, you can be sure your pumpkin has been spared the damage often done by careless shippers. Pick a good one. A long-lasting jack-lantern starts with a firm pumpkin. Avoid choosing a pumpkin that already has soft spots. Clean it well. Exterior: Before you start carving, load a spray bottle with one teaspoon of bleach and one quart of water. Spray and wipe the exterior surfaces first to remove any excess dirt and bacteria that could enter your pumpkin. Interior: Once…

8 Foods you can carve that aren’t pumpkins

Be original this year and forget about pumpkin carving. There are other fun foods you can turn into jack-o-lanterns just as easily. You could start with an unusual looking squash — one of those green and bumpy ones you see at the farmers market, or you could take it totally weird and think citrus. Here are eight creative carving ideas for Halloween. Apples Apples are another symbol for fall, so why not give them the jack-o-lantern treatment? Their firm flesh and thin skin make them a perfect candidate for going under the knife. If you plan on keeping them around for longer than a few hours, try spraying with a bit of lemon juice to keep from turning brown. Bonus points for turning your creation into the best fall apple of them all — candy apples. https://www.instagram.com/p/BMO8G07jQfy/?tagged=carvedapple Oranges A grapefruit spoon will help you tackle the delicate job of gutting an orange.
