Watermelon feta guacamole

Watermelon makes a great substitute for tomatoes in this watermelon guacamole recipe — plus the rind is too cute not to use as a serving bowl. The sweetness of the watermelon tastes great with the spicy jalapeño and creamy avocado. It’s something a little different for your summertime party spread. Watermelon feta guacamole Ingredients 9 ripe avocados, pitted 1 cup fresh cilantro, chopped 3/4 cup chopped red onion 2-3 jalapeños, finely chopped (remove the seeds if you don’t like a lot of heat) 1/4 cup fresh squeeze lime juice 2 cups diced watermelon Salt Pepper 1 cup feta cheese crumbles (the jalapeño variety if you can find it), divided And don’t forget tortilla chips for serving! Directions Scoop out flesh from avocados into a large bowl. Smash with a fork until just slightly chunky. Add lime juice and mix until combined. Add cilantro, onion, jalapeño, watermelon, and 3/4 cup of…

Super Simple Shepherd’s Pie

A 20-minute dinner doesn’t get much better than this classic Irish comfort food. It’s perfect for your St. Paddy’s Day celebration, but it’s plenty delicious enough to make all year long. Shepherd’s Pie is one of those foods you’ll find on any March 17 restaurant menu. You’re practically required to eat it at some point in the month of March. It has become as synonymous with the St. Patrick’s Day celebration as pints of green beer — which is to say, that neither the green-dyed drinks nor this beef-based dinner are exactly Irish. Traditional Shepherd’s Pie uses lamb or mutton (It’s Cottage Pie that uses beef). But here in the U.S., we’ve definitely put our own spin on the holiday, so I think this dish gets a pass, too. I like to cut corners with this recipe and get everything pre-chopped so all I have to do is brown some…

Easy 20-minute Bone Broth Chicken Noodle Soup

Think back to your childhood. If there was one guarantee when you got sick, it was that Grandma would be making you a big batch of chicken noodle soup. But does chicken noodle soup have any actual impact on impending sniffles? According to UPMC, when you’re sick, your immune system can receive support to help fight infections from standard cold and over-the-counter medicines. However, in some cases, the nutrients you get from a big bowl of chicken noodle soup can give additional aid to that support system. Studies have shows that the anti-inflammatory effects from the ingredients in chicken noodle soup can help ease cold symptoms, while the warm broth can clear nasal congestion. So while it may not be a miracle cure-all, chicken noodle soup makes a great meal when you’re feeling under the weather because it’s packed with nutrients. They are easy to digest, soothing to the throat…

Cantaloupe salsa sweetens up end of summer celebrations

My oven broke last week, and I’ve been waiting for two weeks for the new one to arrive. But with this summer heat dragging on, I actually don’t mind the inconvenience one bit. Ive been using this time to get creative with foods that don’t require a heat source. That’s how this bright and cheery cantaloupe salsa came to be. I’ve always been a big fan of fruity salsas, whether on their own, or over fish or chicken. Mango salsa is the king of sweet salsas, closely followed by pineapple salsa — but this melon version is right up there. The cantaloupe and jalapeño create that delicious sweet heat I can’t get enough of. Tortilla chips and salsa might not seems like much of a dinner, but when it’s this delicious — and the weather is this hot — sometimes, it’s all you can handle. And don’t forget this fun…

Dill pickle potato salad is a new take on a picnic time classic

Dill pickle potato salad is the perfect summer sidekick to barbecue, hot dogs, and just about any outdoor meal. Boiled potatoes are mixed with crunchy pickle pieces, minced onion, eggs and a creamy mustard dressing for a flavorful take on an old classic. Whether or not you’re a fan of potato salad, this is the recipe for you. As a full-blow mayo hater, I’m always looking for ways to work around recipes that call for it as an ingredient. This recipe still calls for some, but the zingy mustard and the briny pickles don’t let the taste, or consistency, of the mayo take center stage. Potato salad is usually just a side dish, but don’t be surprised if this one becomes the star of the meal. Dill Pickle Potato Salad Ingredients 5 russet potatoes, cubed (and peeled if you prefer) 1.5 tsp salt 5 eggs, hard-boiled, peeled and roughly…

Strawberries top list of produce with most pesticides, avocados have the least

If you pass on the organic produce in order to save a few bucks, perhaps you should at least consider the organic strawberries, new research suggests. For the third year in a row, strawberries rank the worst on the Environmental Working Group’s Dirty Dozen list of fruits and vegetables. The annual list looks at which of our grocery store produce is harboring the highest number of harmful pesticide residues. This year, more than 98 percent of samples of fruits like strawberries, peaches, cherries and apples tested positive for at least one pesticide residue on the skin. About a third of all strawberry samples had at least 10 pesticides present, the study reported. One sample had an “astounding” 22 pesticide residues. Behind strawberries on the Dirty Dozen list landed spinach. About 97 percent of spinach samples showed pesticide residues were present. Nectarines, apples and grapes rounded out the top five. The report is based…

Slow-cooker mexican turkey chili makes for a lean, hearty meal

If you’re trying to eat healthy, the Super Bowl comes at a super inconvenient time. Just a few weeks past the holidays, we’re hardly detoxed from those dozens of cookies and excess alcohol before BAM!: A whole day full of fattening foods. From buffalo chicken dip to countless foods smothered in cheese, there’s really no where to hide… But then again, who wants to settle for salad? I’ll be whipping up this easy turkey chili first thing in the morning so it’s ready by game time. Just 15 minutes of prep work and 4-5 hours on high in the slow cooker will have this tasty dish piping-hot in time for kick-off. Serve with tortilla chips, shredded Mexican cheese blend, and/or fresh avocado slices (I splurged and made some jalapeño corn bread, too), and you’ll have a hearty, healthy dish, that will satisfy your football-inspired cravings, but won’t leave you regretting your whole day.…

Blackberry, red onion, cheese tart recipe

It’s always when you have a nearly empty fridge, that you come up with the most delicious recipes. This was one of those recipes for me. I usually keep a pasty puff on hand as an easy way to serve up an excess of veggies, but when I searched the fridge, I found only one single sad onion — nothing close to the colorful crop selection I’m used to working with. But from these unlikely beginnings came the most delicious tart. It’s unique flavor combination falls somewhere between light lunch and slightly sweet dessert. Whatever reason you have to serve it, it’s a must try. Blackberry, red onion, cheese tart Ingredients 1 pre-made puff pastry 1 medium red onion about 20 blackberries (fresh is best, but frozen works, too) 1 cup shredded aged white cheddar (Kerrygold was what I used) 1/2 cup shredded goats cheese fresh cracked pepper 1/4 cup sliced almonds 1-2 tbsp olive oil 3…

Cranberry, spinach pinwheels make a perfect holiday appetizer

These cranberry tortilla pinwheel wraps are a perfect holiday appetizer. They’re just bursting with festive color. Red cranberries pop against the creamy white cheese and dark green spinach. The flavor is a perfect blend of sweet and savory, and they’re filling, too. If you need to feed a lot of people, these will help you get there. For a little crunch, try them with the addition of walnuts, too! Cranberry, Spinach Pinwheels Serves 4 as an appetizer  Ingredients  2 large spinach tortillas 1 package cream cheese (8 oz.), room temperature 3/4 cup feta cheese, crumbled 1 cup baby spinach leaves, loosely packed 3/4 cup dried low-sugar cranberries 1/4 cup green onion, thinly chopped 1/4 cup walnut pieces (optional) Directions Wilt spinach by zapping in the microwave for 10-20 seconds. Spinach will shrink in size and should be easy to stir with other ingredients. If spinach is still too fresh, microwave another 10-20 seconds. In…

Pineapple Guacamole Recipe

Sometimes all you want for dinner is a big bowl of guacamole. Let’s be honest — we’ve all had meals much worse than that. Avocados and pineapple are two of my favorite ingredients, so it only seemed natural to put them together to create one of my other favorite foods — guacamole. The sweetness of the pineapple pairs perfectly with the not-so-subtle jolt of heat from the jalapeño. I must admit, I came across this idea at a local restaurant that had a variation of a pineapple, bacon guac on the appetizers menu. I’m not much of a bacon fan, but if that’s you, feel free to crumble up some slices and sprinkle on top. Otherwise, this recipe is vegan and will only take you about 10 minutes Scoop this sweet and spicy combination onto a blue corn tortilla chip for a picture perfect bite. Pineapple Guacamole Recipe Ingredients: 3 ripe avocados, peeled and pitted 1…
