Watermelon feta guacamole

Watermelon makes a great substitute for tomatoes in this watermelon guacamole recipe — plus the rind is too cute not to use as a serving bowl. The sweetness of the watermelon tastes great with the spicy jalapeño and creamy avocado. It’s something a little different for your summertime party spread. Watermelon feta guacamole Ingredients 9 ripe avocados, pitted 1 cup fresh cilantro, chopped 3/4 cup chopped red onion 2-3 jalapeños, finely chopped (remove the seeds if you don’t like a lot of heat) 1/4 cup fresh squeeze lime juice 2 cups diced watermelon Salt Pepper 1 cup feta cheese crumbles (the jalapeño variety if you can find it), divided And don’t forget tortilla chips for serving! Directions Scoop out flesh from avocados into a large bowl. Smash with a fork until just slightly chunky. Add lime juice and mix until combined. Add cilantro, onion, jalapeño, watermelon, and 3/4 cup of…

Vegan Thai-inspired snow pea salad with peanut dressing

Crunchy, colorful and full of flavor. This crisp Thai-inspired salad tossed in a mildly spicy peanut dressing is a total powerhouse of nutrition. Carrots, snow peas, cabbage, quinoa — it’s going to be your new salad obsession. You can instantly add more oomph with grilled chicken, beef, or shrimp, but it’s just as satisfying and filling without any animal protein added. Vegetarians might already know that quinoa and peanut butter are both excellent sources of plant-based protein. (Quinoa brings about 8 grams of protein per cup, and peanut butter brings about 8 grams per two tablespoons.) This superfood salad is addictive! The peanut sauce is similar to that served at your favorite Thai restaurant with chicken satay or with fresh spring rolls, but it’s easy to whip up with ingredients common at your everyday supermarket. You’ll want to put it on everything! Get creative with your salad. Add anything from…

Parmesan crisps make for a perfect, crunchy appetizer

One ingredient recipe? I’m totally in. These paper-thin wafers make for incredible appetizers. A thin layer of fresh-grated Parmigiano-Reggiano cheese is sprinkled into a hot non-stick pan until it bubbles and forms a lacy pattern, full of delicious cheese flavor. Your appetizer effort can end there. But you may also choose to top with a touch more flavor by adding basil, sesame seeds, cumin or black pepper. I chose to use thin jalapeño slices on some and a dried garlic and rosemary blend on others — our ingredient count is still only at three so I figured that was still in the “insanely easy” category of cooking. It’s best to experiment a little at first so you can get the heat in the pan just right. Once you have it right, you can turn out tons of them in no time. Make sure your cheese is real Parm-Reggiano or another hard, grating cheese.…

This is your brain on a Carolina Reaper pepper. Any questions?

Remember those old anti-drug commercials with the motto of “This is your brain on drugs,” and the sizzling egg? Well, now we know what a brain looks like on one of the hottest peppers in the world. A 34-year-old man took part in a hot pepper eating competition in 2016 and ate one “Carolina Reaper.” The Reaper, a cross between a red habanero and a Bhut jolokia pepper, averages 1.5 million Scoville Heat Units. (For comparison, a jalapeno measures in between 1,000 and 10,000.) The man, who wasn’t named, started dry heaving but with no actual vomit. Then it got worse. “He then developed intense neck and occipital head pain that became holocephalic,” according to a report in the British Medical Journal. “During the next few days, on at least two occasions and in retrospect he thought probably more often, he experienced brief intense thunderclap headaches lasting seconds. This is…

Easy, vegetarian Mexican quinoa bowl

This dish is chockfull of so many delicious flavors. From its black beans and jalapeños to the green chilis and cumin, it’s a fun Mexican dish with a twist. It has a hint of heat and a bit of tanginess from the lime, too. It’s a great healthy alternative to taco salad. The quinoa makes this dish so filling, and the cumin and beans makes it so satisfying, you’ll never even notice meat is missing. You could even serve this mix on a bed of fresh greens for extra nutrition. vegetarian Mexican quinoa bowl Serves: about 6 Ingredients 1 can (15 oz) black beans, rinse and drained 1 cup corn kernels, canned or frozen 1/3 cup quinoa, rinsed 1/2 red onion, chopped 1 red pepper, chopped 1 can (4.5 oz), diced green chilis 1 small jalapeño, minced 2 tsp cumin 1 tsp salt + a pinch 1/4 tsp pepper 1 lime, quartered…

Spicy cranberry and pomegranate, brie crostini bites

Crostini literally means “little toasts.” But don’t let that simple translation fool you into thinking this is some bland breakfast. These tiny bites bring big flavor to the party. The sweet pomegranate seeds pair perfectly with the tart cranberries, creamy brie, crunchy baguette and just the right amount of kick from a jalapeño pepper. (You can leave out the pepper if you must, but you’ll miss out on that delicious sweet heat.) It’s the closest thing to appetizer perfection that can come out of your kitchen this holiday. Cranberry and pomegranate Crostini Crostini Ingredients 1 quality baguette, cut into 1/4 inch thick slices 2-3 tbsp extra virgin olive oil 2 tbsp salted butter, melted 8 ounces of brie cheese, softened Cranberry Relish Ingredients 1 pound fresh cranberries, rinsed 1 cup sugar 3/4-1 cup pomegranate arils or seeds 1 jalapeño pepper (adjust according to your love of spice), finely chopped Directions Preheat oven to 425ºF. Line a…

Pineapple Guacamole Recipe

Sometimes all you want for dinner is a big bowl of guacamole. Let’s be honest — we’ve all had meals much worse than that. Avocados and pineapple are two of my favorite ingredients, so it only seemed natural to put them together to create one of my other favorite foods — guacamole. The sweetness of the pineapple pairs perfectly with the not-so-subtle jolt of heat from the jalapeño. I must admit, I came across this idea at a local restaurant that had a variation of a pineapple, bacon guac on the appetizers menu. I’m not much of a bacon fan, but if that’s you, feel free to crumble up some slices and sprinkle on top. Otherwise, this recipe is vegan and will only take you about 10 minutes Scoop this sweet and spicy combination onto a blue corn tortilla chip for a picture perfect bite. Pineapple Guacamole Recipe Ingredients: 3 ripe avocados, peeled and pitted 1…

Fresh and easy summer tomato, peach, jalapeño gazpacho

If you’re expecting an abundance of tomatoes, let me suggest an easy way to them up: gazpacho. Gazpacho is a traditional dish from the Andalusia region of southern Spain. Cities in the area, including Córdoba and Seville, average summer temperatures nearing 100ºF, so it’s no wonder locals have their pulse on what makes a refreshing but nutritious summer meal. Unappetizingly, the vegetable-based, soup-like dish is sometimes referred to as a “liquid salad” or “cold soup” — but don’t let that scare you. The flavors fall somewhere between tangy vegetable juice, veggie soup and Mexican salsa, but it’s a unique dish all on its own, that in no way begs to be warmed. When your fruit baskets start filling with an excess tomato crop, try whipping up a batch of gazpacho and serving with a loaf of garlic bread. You’ll keep yourself, or your family, full, cool and satisfied. Summer tomato, peach,…

Simple watermelon salsa is sweet, mildly spicy

Who would have thought watermelon and jalapeño would be such a delicious pair? What’s better, is that this quick condiment only requires six ingredients. I’ve been experimenting with a lot of watermelon lately, so get ready for quite a few juicy recipes coming up.. This one was one of my favorites, since it’s a perfect match-up of sweet and spicy, combined with saltiness from the chips. I’ve only tried it as a salsa so far, but I could see this going great with grilled chicken or fish, or atop a grilled vegetable dinner. Watermelon Salsa Serves 6-8: Prep time 10 min Ingredients 4 cups watermelon (seedless, or seeds removed and chopped) 1 cup cucumber, chopped 1 cup red onion (about 1/2 large onion, chopped) 2 medium jalapeños (remove seeds for less heat, chopped) 1 cup fresh cilantro, chopped 1 lime, cut in half salt (to taste) Directions Add watermelon, cucumber, onion,…
