Pistachio Pesto Recipe

If you haven’t peaked into your garden lately, you’ll likely find it blooming with basil! Which means one thing — it’s time for a million batches of fresh, homemade pesto. (Also see these 12 tips for making your most perfect pesto) The only thing I don’t dig about making basil is those pricey pine nuts. For this recipe, we’re going to skip them and add a slightly more cost saving nut — the pistachio. Plus, if you’re like me, I’m way more willing to just pop a few pistachios in my mouth as a snack. Pine nut leftovers? They might just go to waste. Pistachios pair perfectly with a traditional pesto recipe. They add their slightly sweet, rich nutty flavor. And as with any pesto recipe, this one is quick, easy, and mixes up perfectly in a food processor or even a blender if that’s all you have. Brush it…

12 tips for makings the best pesto

Pesto is a simple and delicious summer staple. Without it, think of all the basil that would go to waste! But the trouble with this sauce it doesn’t always go so well. Here are 12 tips for how you can make your most perfect pesto. 1. Clean your greens Always, always, always be sure your basil is washed really well before you begin. You don’t want any gritty dirt in your pesto. Wash your basil using cold water — never warm. Warm water wilts greens. Use a salad spinner to get your leaves really dry or gently pat them between layers of kitchen towels to remove all of the moisture. 2. Make it a mix Don’t think you have to stick to just basil. You can add other leafy greens to give your basil a distinct flavor. Replace some of your basil with parsley instead for a lighter flavor, or try arugula…

Turkey and cheese, pesto panini recipe

If you’re a bit of a food cheapskate like me, you probably skip right over panini on a menu. They’re undeniably delicious, but they’re outrageously priced — $17 for a warmed deli-meat sandwich?! You can make the exact same sandwiches at home — no exaggeration. You might spend the same amount on ingredients, but you’ll be able to make enough sandwiches to feed your whole family, or yourself for a week. Try this recipe for a warm, cheesy turkey and cheese panini with pesto. The pesto mayo and fresh baked bread make it taste like it came from one of those overpriced fancy sandwich shops, but you’ll be eater fresher and healthier, and of course, saving yourself some cash in the process. Turkey and cheese, pesto panini Ingredients 2 tbsp light mayonnaise 4 tsp basil pesto 4 slices of bakery bread, thin sliced (Sourdough is my favorite for this recipe)…

Kale pesto pizza is delicious, healthy option for pizza lovers

We’re never too old for a simple slice of cheese pizza, but the best part of being an adult might actually be the whole new world of pizza toppings we open ourselves up to. Seriously — you probably started to order veggies, and even things like pears, on your pizza somewhere around the time you got excited you could pay all your bills on time. Since then, you’ve never looked back. The great pizza awakening also means you no longer need red sauce to consider it a proper pie, so I don’t need to tell you that pesto can go on pizza. But wait! What if I said that this pesto can be made of kale — the ultimate adult vegetable — and you’re going to love it! My friends (adults when they want to be) were shocked to find out my pesto sauce was made with kale instead of the basic basil they…

Creamy avocado pesto sauce with veggie noodles

Pasta never gets old. Just change the sauce and the veggies and you have an entirely different meal. This pasta and sauce combo puts a California twist on an old favorite — pesto. Avocado is so versatile. If you’ve only been using it as a breakfast food or burrito topping, you’ve been missing out. Its unbelievably creamy texture adds tons of flavor and it coats almost any type of noodle really well — Angel hair, farfalle, whole wheat rigatoni. Add in a few handfuls of basil and some nuts for texture, and you’ll have a seriously satisfying sauce and spread. I chose veggie noodles (sometimes called zoodles because of the zucchini) as my base to give this dish a truly West Coast kind of feel. You can make them with lots of different vegetables by using a spiralizer or by carefully and thinly slicing each vegetable with a knife. As a time saver, or if…

12 Foods you think are vegetarian but surprisingly aren’t

Becoming vegetarian isn’t always as easy as recognizing there is pepperoni on your pizza or bacon bits on top of your Brussels sprouts. Whether you’ve gone vegetarian for dietary or ethical reasons, you always have to be on the look out for the sneaky animal products manufacturers slip into seemingly safe food items. If there’s not chicken stock in your vegetable soup (very common at restaurants and in store bought brands), there’s gelatin in your marshmallows (so long Rice Krispie squares!). Here are 10 other foods that have got to go if you’re serious about an animal-free diet. 1. Parmigiano-Reggiano Cheese For vegetarians, cheese can spruce up a plate of pasta, make a salad extra satisfying, or add oomph to a tray of appetizers. Unfortunately, for vegetarians, not all cheeses are, well, vegetarian. Some cheeses use an enzyme called rennet that is sourced from the stomach lining of goats and cows. This enzyme helps…

Basil Pesto with Almonds Ready in Minutes

When a recipe calls for an ingredient that requires a special trip to the store, I find it rarely gets made. That’s been the situation with me and pesto. Does anyone really have pine nuts handy? This recipe is great because the almonds easily substitute for pine nuts, and most of us have almonds stocked in the pantry. Just about any nuts will add a nice crunch, really. A medley of almonds, pine nuts, and walnuts would add great texture and flavor. Pesto is easy to jar and save all year, but enjoy it fresh, now that basil is growing abundantly in the garden. To make this recipe, simply add all ingredients to a food processor or high power blender, and pulse until ingredients are chopped finely. Pesto works well with chicken, vegetables, pasta, grilled sandwiches, Caprese salads and more. Pesto with Almonds Ingredients 3 cups packed fresh basil (or about 3 ounces)…
