Tropi-kale pineapple kale smoothie

Start your morning with a healthy dose of dark, leafy greens masked behind a delicious smoothie that tastes like the tropics. The secret to hiding kale is pineapple. Ripe, juicy pineapple perfectly balances out any bitter kale taste. Even if you’re unsure about your tolerance for liquified kale, or swear off all things green before 11 a.m., you should still try this recipe because it doesn’t even taste like kale. That’s right. Get a crazy dose of fiber, antioxidants, calcium, vitamin K and C, protein, and more, all before you head out the door. Try this Mango Green Smoothie, too! Tropi-kale smoothie Makes 1-2 servings Ingredients 1/4 of a fresh pineapple, skinned and core removed (or 1/2 cup frozen pineapple) 4 kale leaves, stem removed 1 ripe banana, peeled 1/4 cup water (optional) 1 tbsp chia seeds Directions Add all ingredients to a high-powered blender and puree on high for…

Blue and green blueberry avocado smoothie

Mornings that start with smoothies are the best mornings. They’re such a nice, light and filling guilt-free breakfast option. Plus, I just love getting creative and trying different flavor combinations — but not as much as I love squeezing in a few servings for fruits and veggies before 9 a.m. Seriously, I make smarter eating decisions all day because I know I’ve had a great start. Why stop there? I think to myself. It’s true what they say. One healthy decision really does lead to another, and another, and another. Days that start with donuts definitely don’t inspire gym workouts. If you’re trying to get in better shape this year, start with your mornings and go from there. Try this healthy blue and green blueberry avocado smoothie — it’s one of my favorites — and see if you don’t feel like making other healthy choices, too. Blue and green blueberry…

Kale flavored candy canes actually exist, and that’s just the beginning

When it comes to candy canes, there’s usually not a whole lot left to the unknown. Once you peel back the thin, plastic wrapper, you expect you’ll get to enjoy a nice peppermint-flavored candy. But the world seems to have gone a little crazy lately and so too have our trusty red and white striped Christmas treats. Archie McPhee — the maker of candy cane flavors no one would ever ask for — thinks that peppermint is just a little too predictable. From macaroni and cheese, to pizza, and even ham (hamdy canes, of course), the quirky candy company probably has a candy cane for that. For veggie lovers, the green and white striped Kale Candy Cane ($7) offers “The bitter grassiness of your favorite vegetable.” Also, find comfort that “This set of six  Kale Candy Canes gives you all of the flavor of kale with none of the dietary benefits.” The red…

Tuscan risotto with kale, mushrooms, and walnuts

This classic dish gets upgraded to main meal status with the addition of hearty mushrooms, Tuscan kale, and crunchy walnuts. It’s so easy to prepare, and better yet, you can have this elegant vegetarian dish ready in about 35 minutes. This traditional method of making risotto involves standing at the stove and stirring for around 18 minutes. It might seems a little labor intensive compared to low-fuss pastas, but to achieve the signature creamy texture risotto is known for, it’s well worth the effort. If you’re not vegetarian, and if you want to serve this as a side dish instead, consider pairing it with your favorite chicken Marsala for a tasty Italian combo. This Tuscan risotto with kale, mushrooms, and walnuts will easily be your new favorite go-to recipe this fall and all year long. Tuscan risotto with kale, mushrooms, and walnuts Serves 4 Ingredients 5 cups vegetable or chicken…

Colcannon is the traditional Irish dish you must try

Lots of foods have become synonymous with Ireland on St. Patrick’s Day — Soda Bread, Shepherd’s Pie, and corned beef, to name a few. But have you ever heard of colcannon? It might be lesser-known on a global scale, but to the Irish, it’s a true taste of home. Colcannon is a traditional Irish dish made with mashed potatoes, cabbage (or kale) and leeks, yet somehow, most parade-going, Irish heritage-loving Americans have never heard of it. It’s tasty (picture rich potatoes and lightly crunchy cabbage cradling a pool of melty butter) and easy to make, so it’s surprising it never caught on here on our side of the pond. The name colcannon is said to have originated from the Gaelic phrase “cal ceannann,” meaning white-headed cabbage — the vegetable most commonly mixed into the potatoes. During the 17th and 18th centuries, potatoes, cabbage, and leeks were considered to be food for the…

Celery, apple, spinach, kale, lemon and ginger juice

It’s not always easy squeezing in the fruits and veggies you need. This green juice is a powerhouse blend of all the nutrients you need to help strengthen your immune system and keep you feeling awake and active. Juice isn’t a substitute for eating the whole vegetable (you’ll miss out on that healthy fiber), but it’s a great quick boost to help see you through cold and flu season. Plus the apples give it a great tart taste that will make it enjoyable to drink any time of year. Celery, apple, spinach, kale, lemon and ginger juice Makes about 4 cups Ingredients 8-6 stalks of celery, washed 2 cups baby spinach 8-10 large kale leaves 3 Granny Smith apples, roughly chopped 2 lemons, peeled 2 inches fresh ginger Directions Set juicer dial to hardest setting and run fruits and vegetables in order of hardest to softest (apples, ginger, celery, kale,…

Kale pesto pizza is delicious, healthy option for pizza lovers

We’re never too old for a simple slice of cheese pizza, but the best part of being an adult might actually be the whole new world of pizza toppings we open ourselves up to. Seriously — you probably started to order veggies, and even things like pears, on your pizza somewhere around the time you got excited you could pay all your bills on time. Since then, you’ve never looked back. The great pizza awakening also means you no longer need red sauce to consider it a proper pie, so I don’t need to tell you that pesto can go on pizza. But wait! What if I said that this pesto can be made of kale — the ultimate adult vegetable — and you’re going to love it! My friends (adults when they want to be) were shocked to find out my pesto sauce was made with kale instead of the basic basil they…

One-pot Rustic Tomato Tortellini Soup with kale

Tortellini always feels a bit fancy, despite being fairly cheap and easy to prepare. A package of the frozen stuff can be stored for months in the freezer and will still taste great. The little stuffed pastas can be used a ton of different ways too, especially if you’re looking to create hearty meals, that can please a crowd, without centering a dish around a meat protein. This soup will make you feel like you made something special for yourself, yet it takes just 20 minutes from prep to table. It’s a delicious cross between warm, soothing soup, and comforting pasta that you can effortlessly whip up any night of the week. If you’ve taken the time to create your own pasta, feel free to use fresh tortellini. Just reduce tortellini cook time to about 3 minutes. Rustic Tomato Tortellini Soup with kale Serves 6 Ingredients 1 package (20 oz) cheese tortellini…

Study shows this much salad can keep your brain young

You can thank mom and dad for forcing you to finish your greens before getting up from the dinner table. While they knew veggies and salads were good for you, they might not have known exactly how much so. Salads are packed with essential nutrients — protein, iron, and fiber, just to name a few. And now, researchers have found that eating one to two servings of leafy green salads per day can improve your memory and overall cognitive ability. The study, published in the journal Neurology, was lead by Martha Clare Morris, ScD, a nutritional epidemiologist at Rush University Medical Center. Over the span of 4.7 years, Morris and her colleagues looked at 960 participants, ages 58 – 99. Volunteers were asked to fill out questionnaires on the frequency they ate foods like spinach, salad, kale, collards and other greens. They were also asked to complete yearly thinking and memory skills tests to gauge…
