So when he posted a picture of a steak covered in mayonnaise to his Instagram account, fans knew it was worth looking into. (Remember when he told us to cook meatballs in an egg carton? Or how about juice a watermelon with an immersion blender?) Brown captioned the photo: “I didn’t have any oil or butter so..” https://www.instagram.com/p/Bn45Aa-HXwX/ It turns out that coating meat with mayo is actually nothing new to savvy chefs of the world. After all, mayonnaise is just eggs and oil, so the condiment can actually add more flavor to steaks and seafood than olive oil can do alone. This trick has also been used by grilled cheese masters to develop a crispier exterior. They mayo actually raises the smoking point, so the sandwich can be kept on the griddle longer, allowing…

Facebook survey reveals how we post about beverages

If you’re going out to a restaurant or bar tonight, there’s a 1 in 3 chance you’ll be posting a picture to social media — and it’s probably going to be food or drink. While it may be creepy that Facebook can anticipate your actions so specifically, it actually makes sense. People want to present the best versions of themselves and show their friends the experiences they’re having. This largely includes nights on the town. In a recent survey, Facebook found that, while out and about, many people will share their opinions of their beverages and tag them #coffee or #craftbeer, inspiring others to go sip for themselves. About 50 percent of the people surveyed said they’ve intentionally gone and tried the drinks that friends and family have shared and tagged online. People have always purchased drinks when they were thirsty, but smart phones are changing the path they take to purchase, making it…

Alton Brown’s Genius Meatball Baking Hack You’ll Want to Copy

If you consider the perfect meatball, you probably think a crispy exterior with a juicy interior, seasoned well and smothered in simmering tomato sauce. But until now, meatball bakers have typically tossed them on a sheet pan where they would simmer in their own grease and retain a bit too much of that sogginess. Food innovation is a marvelous thing. Television show host, chef and author Alton Brown took to Instagram to share with us his genius hack for solving this dilemma. He posted, “Thinking about the time I roasted my meatballs in an egg carton to wick away the grease. #crispyallover.” Fans responded in the comments with praise. Using Alton’s hack, the grease pools that usually form when baking meatballs are soaked up by the cardboard egg carton. This allows the meat to form a crispy exterior shell. (With grease-soaked paper in the oven, be sure to keep a careful watch!) Recipe…
