I admit that the name “dessert hummus” is sort of baffling to the tastebuds. You can imagine the slightly gritty, savory texture of pulverized chickpeas in traditional hummus but can’t quite image how “sweet” can come anywhere near this popular appetizer. Ice cream sandwiches already scream summer, but with a little makeover, they can be the coolest Fourth of July treat at the table. Okay, this “recipe” is basically cheating. But if you want to add a little fun to your Fourth of July without any effort — literally, like zero effort — then you’ll love this simple trick. Buy a pack of ice cream sandwiches from the grocery store — or ice cream truck! I went for the mini sandwiches since there are always so many delicious treats at picnics. Smaller sizes mean you can sample more sweets. They also mean less mess, since they won’t have as much time to melt.  Pour some sprinkles in a bowl, and get rolling. Parmesan crisps make for a perfect, crunchy appetizer

One ingredient recipe? I’m totally in. These paper-thin wafers make for incredible appetizers. A thin layer of fresh-grated Parmigiano-Reggiano cheese is sprinkled into a hot non-stick pan until it bubbles and forms a lacy pattern, full of delicious cheese flavor. Your appetizer effort can end there. But you may also choose to top with a touch more flavor by adding basil, sesame seeds, cumin or black pepper. I chose to use thin jalapeño slices on some and a dried garlic and rosemary blend on others — our ingredient count is still only at three so I figured that was still in the “insanely easy” category of cooking. Easy, vegetarian Mexican quinoa bowl

This dish is chockfull of so many delicious flavors. From its black beans and jalapeños to the green chilis and cumin, it’s a fun Mexican dish with a twist. It has a hint of heat and a bit of tanginess from the lime, too. It’s a great healthy alternative to taco salad.
