Book Review: Canning goes Back to Basics for beginners

This time of year always seems to turn in to a game of pass the produce. Your neighbor has too many tomatoes. Your friend gets extra cucumbers in her CSA. And every week, your co-worker tries to pawn off a basket of his peppers. There are worse problems to have. This year, instead of saying no — or continuing to pass the goods down the line to other friends — pick up a new skill for this plethora of produce, and learn to can. Canning is the next natural extension of our increasing national awareness of eating fresh, healthy and local. Grandma knew canning could feed her family healthy meals all year long, and what’s old usually becomes new again. Canning — much like knitting (can you believe it?) — is back on the scene. But between tools, temperatures and safety measures, the age-old practice can leave first-timers at a loss (and wishing Grandma was still…

Healthy baked coconut shrimp

Something happens when you learn to cook at home. You realize that all those tasty items you order out at restaurants are overpriced, and you can usually make them healthier at home. Healthier means you get to eat them more often — an obvious win. Coconut shrimp was one of those appetizers for me. If it was on the menu, I was ordering it. But coconut is naturally high in fat, and who knows what other unspeakable ingredients get mixed in the batter — and fry oil is always frightening. Enter: my healthy version of coconut shrimp. It’s baked, so right away you’re eliminating the scary fats from frying. The crispy coconut will still give that craveable crunch. Plus, the sauce is often the star of the show anyway. Thai chili sauce with a hint of apricot and brown sugar can make pretty much anything better. So try this easy appetizer when…

Arugula, mint and apricot salad

Apricots are too often overlooked in the summer. We repeatedly reach for fresh berries and cherries, even peaches and watermelon. But for many, apricots are a fruit only eaten dried. A ripe apricot, with its dainty golden blush-color, dripping with juices is a perfect fruit on its own or used in a summer salad. Apricots give you a boost of vitamin A which is said to help repair skin damage from the sun. They also maintain electrolyte balance in the body — great for sweaty, active summer days, since electrolytes reduce cramping and keep blood pumping through your body. Expand your fruit horizons this summer and try this refreshing arugula, mint, apricot salad while the apricots are at their peak. arugula, mint, apricot salad Serves 2 Ingredients 2 cups arugula 1/4 cup mint leaves 2 ripe apricots, sliced 1 cup cherry tomatoes, halved 1/2 cup almond slices 1/2 orange (for dressing), cold 1 tbsp extra virgin…

Baked Crab Rangoons with spicy apricot dipping sauce

If you’ve never had a crab rangoon, or if you’ve only had them fried, prepare for your next great obsession. Rangoon’s, or crab puffs, are typically made up of crab meat, cream cheese, and onions with any number of additions such as carrots, garlic or Worcestershire sauce. They are common appetizers nowadays, appearing on most Thai and Chinese food menus in the U.S. While their history is unclear, cream cheese is essentially nonexistent throughout Southeast Asia, so they are likely neither Thai nor Chinese in origin, and yet just another delicious deep-fried, cheesy American invention. When crab rangoons are on a menu, I’m blindsided. I no longer feel the pangs of culinary adventure. I couldn’t care less about the special entrees or appetizers on the menu that evening. My focus is set on those warm, cheesy, crab bites and what surprise sauce the restaurant might be serving with them. I decided if…

Quick and easy appetizer for anytime

Sometimes you want something a little fancier than chips and salsa as a snack or appetizer for your friends. These are perfect because you can keep the pre-made pastry shells in your freezer for up to 3 months. They look like you put a ton of time into them, but you can get these plated in under a half hour. I made these for breakfast one morning as something out of the ordinary, and everyone loved the idea. I had three flavors combos: Egg, onion and mushroom Warm berries and cream cheese Brie with dried figs and apricot slices INGREDIENTS 1 package puff pastry cups (I use these from Pepperidge Farm) OR 2 packages puff pastry shells Toppings: I used cream cheese and berries; eggs, onion and mushrooms; and brie with dried figs and apricots DIRECTIONS Follow directions for baking pastry shells in oven. Prepare fillings to your liking. Cook eggs and mushrooms in separate…
