These lime cookies are buttery and bursting with tangy citrus flavor. They’ll remind you of a pleasant spring day. Enjoy alone or with tea or milk. Just enjoy them before some else does — These cookies never last long!


Springtime lime cookies

Ingredients

Add milk and lime juice together in a small cup and let sit for 5 minutes.

Icing

  • 1/3 cup confectioners sugar
  • 2 tbsp lime juice
  • 1 tbsp butter, room temperature
  • 1 tbsp lime zest

Cookies

  • 2 tbsp lime juice
  • 1/3 cup milk
  • 1/2 cup butter, room temperature
  • 3/4 cup white sugar
  • 1 egg
  • 2 tbsp lime zest
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda

Directions

  1. Tip: Flexible cups make mixing then pouring simple.

    Preheat oven to 350ºF.

  2. In a small cup, combine the milk and 2 tbsp of lime juice. Let stand for up to 5 minutes.
  3. Add 3/4 cup sugar and butter in a large bowl and beat until light and fluffy. Add the egg and beat until combined. Add 2 tbsp lime zest and the milk mixture and beat again.
  4. In a small bowl, whisk together the flour, baking soda and baking powder. Add dry ingredients into wet ingredients bowl and mix together by hand until flour is completely blended. (Dough will be soft and sticky.)
  5. On an uncreased cookie sheet, drop heaping spoonfuls dough and lightly shape them, gently smoothing any pieces sticking out too far. (Completely smooth cookies are not necessary.)
  6. Bake for 8 to 10 minutes, or until the edges appear light golden brown. Remove from oven and let cool 1 minute before gently transferring to a wire cooling rack.
  7. As cookies cool, make the glaze by stirring together 2 tbsp lime juice, confectionary sugar, lime zest and butter. When cookies are completely cooled, brush on tops.
  8. Enjoy!
