I’m in love with my popsicle mold. Not only is it great for making healthy treats, but you can freeze leftover juices and smoothies when you accidentally make too much — which for me is all. the. time! Most of all, I love that you can puree fruit and veggies that are about to go bad and extend their shelf life by turning them into delicious frozen treats.

This recipe was a product of me going overboard buying mangos. I was so excited they were less than a dollar a piece, but I definitely bought to many. It became the perfect opportunity for fresh mango popsicles.

Note: My popsicle mold holds about 3 cups of juice, so you may have to adjust the recipe a bit depending on the capacity of your own mold, but this should get you close.

Ingredients

  • 2 medium mangos, skinned and flesh removed from pit
  • 1 cup pineapple, diced
  • 1/3 cup lime juice (or water works fine if you don’t have limes)
  • 2 tbsp honey (optional)

Directions

  1. Add mango, lime juice, and half of the honey to blender. Puree until smooth. Pour into each mold, filling about 2/3 of the way. Add popsicle stick and freeze for at least 3 hours.
  2. Add pineapple and remaining honey to blender and puree until smooth. Pour mixture into molds until filled. Freeze another 3-5 hours.
  3. Enjoy!
